It is ideal for preparing dosas, uttapams, rotis, chapatis, parathas, pancakes, crepes and other flatbreads.
It arrives pre-seasoned, so you can cook on it straight away. To build the surface further, rinse it in warm water, dry it completely over a low flame, rub a thin film of cooking oil over the whole pan, heat until it just begins to smoke and let it cool. Two or three rounds before first use makes a visible difference.
Clean it while it is still warm: hot water and a coir scrub or a stiff brush, no long soaking. Dry it on the flame for a minute, because water left standing is what causes rust, then wipe a few drops of oil over the surface before putting it away. Avoid the dishwasher.
For dosa, cast iron has one decisive advantage: it holds heat. When batter meets a thin non-stick pan the surface temperature drops and the dosa steams instead of crisping; cast iron stays hot and browns it evenly. There is also no coating to scratch or peel, and the surface improves with use rather than wearing out.
10 inch suits most homes and makes a dosa that fits an ordinary plate. 11 and 12 inch are for larger, restaurant-style dosas and for cooking in bulk, but they are heavier, so check you are comfortable lifting one hot. If this is your first cast iron tawa, 10 inch is the safer choice.
